We stayed here for only one night, so I can't speak for longer term, but we really enjoyed our night here.
It's a small family run ryokan that's about 15 minutes walk from the local train station or about 25 from the Gifu JR station. You could also hire a car.
It's actually situated along a park with an abundance of cherry trees, so if you come during the blossom season you get an incredible treat. There's also a protected national forest nearby, and a very beautiful, quiet shinto shrine a hundred feet away.
The proprietors are extremely nice and polite and refused to let me carry our bags to my room alone, despite me being twice their size and able to carry both our suitcases at once. They were nothing but warm and helpful our time there, despite neither of us speaking very much of the other's languages. Our room had a beautiful view of Gifu, as the Ryokan is about 3-4 levels with landings(a lot of stairs, so if that's a physical problem be warned).
It's an incredibly cozy place and I would happily spend a week here if time had allowed.
